Ingredients
Scale
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 large egg
1 cup milk
1/4 cup vegetable oil
1/2 cup pizza sauce or marinara sauce
1 cup shredded mozzarella cheese, divided
1/2 cup mini pepperoni, chopped (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a standard 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, oregano, garlic powder, and black pepper. This is your dry mix.
In a separate medium bowl, whisk the egg, milk, and vegetable oil until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
Gently fold in the pizza sauce, half of the mozzarella cheese, and the chopped pepperoni, if you are using them.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Top each muffin with the remaining mozzarella cheese.
Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
Let the pizza muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For freezer lunches, cool the mini pizza muffins completely, then place them in a freezer-safe bag. Reheat from frozen in the microwave or toaster oven.
You can substitute the pepperoni with cooked, crumbled sausage or finely diced bell peppers for variety.
These cheesy pizza cupcakes freeze well for up to three months.
