Ingredients
Scale
6 cups mixed greens (e.g., spinach, arugula)
1 cup pomegranate seeds
1/2 cup crumbled feta cheese
1/4 cup toasted pecans or walnuts
1/4 cup dried cranberries
1/2 red onion, thinly sliced
For the Dressing: 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon Dijon mustard, 1 teaspoon maple syrup, salt and pepper to taste
Instructions
Wash and dry your mixed greens. Place them in a large salad bowl.
Arrange the pomegranate seeds, crumbled feta, toasted nuts, dried cranberries, and sliced red onion evenly over the greens.
In a small jar, combine the olive oil, balsamic vinegar, Dijon mustard, and maple syrup.
Close the jar tightly and shake well until the dressing emulsifies. Season with salt and pepper.
Drizzle the dressing over the salad just before serving.
Gently toss the salad to coat all ingredients lightly. Serve immediately and enjoy your creation.
Notes
Toasting the nuts brings out their flavor. Watch them closely so they do not burn.
You can substitute goat cheese for feta if you prefer a tangier flavor.
Make the dressing ahead of time and store it in the refrigerator for up to three days.
For a heartier meal, add grilled chicken or chickpeas.
