Ingredients
Scale
1 cup Plain Greek Yogurt
1/2 cup Mixed Winter Citrus Segments (Orange, Grapefruit, Clementine)
1/4 cup Granola (Your favorite kind)
1 tablespoon Honey or Maple Syrup
1 teaspoon Chia Seeds (Optional)
Instructions
Prepare your citrus. Peel and segment the oranges, grapefruit, and clementines. Remove as much white pith as possible.
In a small bowl, mix the Greek yogurt with the honey or maple syrup until just combined.
Gather your parfait glasses or jars.
Start layering. Place a spoonful of yogurt at the bottom of the glass.
Add a layer of mixed citrus segments over the yogurt.
Sprinkle a layer of granola on top of the fruit.
Repeat the layers: yogurt, then fruit, then granola, until the glass is full, ending with a sprinkle of granola on top.
If using, sprinkle chia seeds over the top layer.
Serve immediately for the best crunch, or chill for up to an hour.
Notes
For extra flavor, zest a small amount of orange peel and mix it into the yogurt.
Use low-fat or non-fat yogurt if you prefer a lighter option.
Make sure your granola is fresh for maximum crunch against the creamy yogurt.
This recipe is easily scaled up for meal prepping a few days ahead, though it tastes best assembled fresh.
