Ingredients

Scale
  • 1 cup Quinoa
  • 2 cups Vegetable Broth or Water
  • 1 large Sweet Potato, cubed
  • 2 cups Brussels Sprouts, halved
  • 1 cup Carrots, chopped
  • 1 Red Onion, cut into wedges
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • 1 cup Cooked Chickpeas (rinsed and drained)
  • For Dressing: 1/4 cup Tahini, 2 tablespoons Lemon Juice, 1 tablespoon Maple Syrup, 2-4 tablespoons Water, a pinch of Salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the sweet potato, Brussels sprouts, carrots, and red onion with olive oil, thyme, garlic powder, salt, and pepper on a large baking sheet.
  3. Roast the vegetables for 25-30 minutes, flipping halfway, until tender and slightly caramelized.
  4. While vegetables roast, cook the quinoa. Combine quinoa and vegetable broth (or water) in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork.
  5. Prepare the dressing: Whisk together tahini, lemon juice, maple syrup, and salt. Add water, one tablespoon at a time, until you reach a smooth, pourable consistency.
  6. Assemble your bowls: Divide the cooked quinoa among serving bowls.
  7. Top the quinoa with the roasted vegetables and the cooked chickpeas.
  8. Drizzle generously with the tahini dressing. Serve warm.

Notes

  • Feel free to substitute seasonal root vegetables like parsnips or butternut squash.
  • For extra flavor in the quinoa, cook it in broth instead of water.
  • If you prefer a sweeter dressing, increase the maple syrup slightly.
  • Taste and adjust seasoning on the vegetables before serving.
