Ingredients
Scale
2 large sweet potatoes, diced
1 pound ground breakfast sausage (check for Whole30 compliance)
1 medium onion, chopped
1 red bell pepper, chopped
2 tablespoons olive oil
1 teaspoon dried thyme
1/2 teaspoon garlic powder
Salt and pepper to taste
4 large eggs
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the diced sweet potatoes and cook, stirring occasionally, until they begin to soften, about 8-10 minutes.
Add the onion and bell pepper to the skillet. Cook for another 5 minutes until the vegetables are tender-crisp.
Push the vegetables to one side of the skillet. Add the ground sausage to the empty side. Break up the sausage with a spoon and cook until browned through.
Stir the thyme and garlic powder into the sausage mixture. Season with salt and pepper.
Mix the sausage and vegetables together well.
Create four small wells in the hash mixture. Crack one egg into each well.
Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
Serve immediately.
Notes
You can easily double this recipe for meal prep.
Jacob likes to add a pinch of smoked paprika for extra depth.
If you prefer firm yolks, cook the eggs slightly longer or cover them while cooking.
