You can make incredibly easy and creamy White Chicken Enchiladas tonight! This recipe uses a simple green chile cream sauce that comes together fast, perfect for a busy weeknight. Jacob perfected this version, making it a favorite in our Taste Portfolio.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 8 flour tortillas (medium size)
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 (4 oz) can diced green chiles, undrained
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the onion and cook until soft, about 4 minutes. Add the garlic and cook for 1 minute more until fragrant.
  3. Whisk in the cream of chicken soup, sour cream, and milk until smooth.
  4. Stir in the diced green chiles, cumin, salt, and pepper. Heat the sauce through, stirring often, but do not boil.
  5. Remove the sauce from the heat. Stir in 1/2 cup of the Monterey Jack cheese until melted and the sauce is creamy.
  6. Take one tortilla and place about 1/4 cup of shredded chicken down the center. Roll it up tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and chicken.
  7. Pour the creamy white sauce evenly over the rolled enchiladas.
  8. Sprinkle the remaining 1/2 cup of Monterey Jack cheese over the top.
  9. Bake for 18 to 20 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.

Notes

  • We use leftover rotisserie chicken for speed. This makes the process much faster.
  • If you prefer a thinner sauce, add a splash more milk while whisking.
  • Jacob likes to add a pinch of cayenne pepper to the sauce for a tiny bit of heat.
