Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
1 1/2 cups packed light brown sugar
1 cup molasses
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup rolled oats
For optional glaze: 1 cup powdered sugar, 2-3 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, whisk together the melted butter and brown sugar until smooth.
Stir in the molasses, eggs, and vanilla extract until fully combined.
In a separate medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Fold in the rolled oats gently.
Spread the batter evenly into the prepared baking pan.
Bake for 25 to 30 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached.
Let the bars cool completely in the pan on a wire rack.
If using the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled bars.
Once set, use the parchment overhang to lift the bars out and cut them into squares.
Notes
Jacob suggests using fresh spices for the best gingerbread flavor.
For a chewier bar, slightly reduce the baking time.
These bars store well in an airtight container at room temperature for up to four days.
If you prefer a stronger ginger kick, increase the ground ginger to 1 1/2 teaspoons.
