Ingredients
Scale
1 (15-ounce) can black beans, rinsed and drained
1/2 cup rolled oats
1/2 cup cocoa powder
1/2 cup maple syrup
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegan chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
Combine the rinsed black beans, rolled oats, cocoa powder, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt in a food processor.
Process the mixture until it is completely smooth. Stop and scrape down the sides as needed. You want no bean chunks remaining.
If using, gently fold in the vegan chocolate chips.
Spread the batter evenly into the prepared baking pan.
Bake for 20 to 25 minutes. The edges should look set, but the center will still look slightly soft for fudginess.
Let the brownies cool completely in the pan before slicing. Cooling develops the fudgy texture.
Remove from the pan using the parchment paper and cut into squares.
Notes
Rinsing the black beans well removes the liquid that can affect the flavor.
For an extra rich flavor, use dark cocoa powder.
Do not overbake; these brownies get fudgy as they cool.
