Ingredients
Scale
1 cup cooked sweet potato, mashed
1/2 cup unsweetened plant milk (soy or oat recommended)
1/4 cup nutritional yeast
1 tablespoon lemon juice
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt, or to taste
1/4 teaspoon smoked paprika
Pinch of turmeric (for color, optional)
Instructions
Cook the sweet potato until very soft. You can steam, boil, or roast it. Measure out 1 cup of the mashed sweet potato.
Combine the mashed sweet potato, plant milk, nutritional yeast, lemon juice, onion powder, garlic powder, salt, smoked paprika, and turmeric (if using) in a high-speed blender.
Blend on high until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
If the sauce is too thick, add plant milk, one tablespoon at a time, until you reach your desired consistency.
Taste the sauce and adjust salt or lemon juice as needed for flavor balance.
Heat the sauce gently in a small saucepan over low heat, stirring constantly, until warmed through before serving over cooked macaroni or using as a dip.
Notes
For a thicker sauce, reduce the amount of plant milk used initially.
If you do not have a high-speed blender, press the sauce through a fine-mesh sieve after blending for the smoothest texture.
