This recipe provides the best method for making soft, chewy cookies using a standard lemon cake mix for quick preparation.

Ingredients

Scale
  • 1 box (15.25 oz) lemon cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon lemon extract (optional, for stronger flavor)
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the lemon cake mix, eggs, and vegetable oil. Mix with a spoon or electric mixer until a soft dough forms. If using, mix in the lemon extract.
  3. Place the powdered sugar in a shallow dish.
  4. Scoop the dough into rounded tablespoons. Roll each scoop into a ball, then roll the ball thoroughly in the powdered sugar until fully coated.
  5. Place the coated dough balls about 2 inches apart on the prepared baking sheets. Do not flatten them.
  6. Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft. Do not overbake.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra tartness, add 1 teaspoon of lemon zest to the dough mixture.
  • If you prefer a slightly crispier edge, bake for an additional minute.
  • These cookies store well in an airtight container at room temperature for up to 4 days.
