Ingredients
Scale
1 lb sushi-grade Ahi tuna, finely diced
1/4 cup mayonnaise (Japanese style preferred)
2 tablespoons sriracha (adjust to your heat preference)
1 tablespoon soy sauce or tamari
1 teaspoon sesame oil
1 teaspoon fresh ginger, grated
1/2 teaspoon rice vinegar
1/4 cup scallions, thinly sliced
1 ripe avocado, diced
1 English cucumber, thinly sliced for serving
Optional: Sesame seeds for garnish
Instructions
Place the finely diced tuna in a chilled bowl.
In a separate small bowl, whisk together the mayonnaise, sriracha, soy sauce, sesame oil, grated ginger, and rice vinegar to create the spicy sauce.
Pour the sauce over the diced tuna. Gently fold the mixture until the tuna is evenly coated. Do not overmix.
Gently fold in the sliced scallions.
If using, gently fold in half of the diced avocado.
Chill the mixture for 5 minutes to allow flavors to combine.
To serve, place a small ring mold on a plate or directly on a cucumber slice. Spoon the tuna mixture into the mold, pressing lightly.
Remove the mold. Garnish the top with the remaining diced avocado and a sprinkle of sesame seeds, if desired. Serve immediately with the remaining cucumber slices or crispy wonton chips.
Notes
You must use sushi-grade or sashimi-grade tuna for this raw preparation.
For a Nobu style presentation, you can layer the tartare with thin slices of avocado at the bottom of the serving ring.
Adjust the sriracha amount to control the spice level of your marinade.
