Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 cup pineapple chunks, fresh or canned
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1/4 cup soy sauce
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon ginger, grated
1 clove garlic, minced
Salt and pepper to taste
Instructions
In a bowl, whisk together soy sauce, olive oil, honey, grated ginger, and minced garlic.
Add the chicken cubes to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Thread the marinated chicken, pineapple chunks, bell pepper pieces, and red onion onto skewers, alternating the ingredients.
Preheat your grill to medium-high heat.
Grill the kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
Season with salt and pepper to taste.
Serve hot and enjoy!
Notes
You can use wooden skewers, but soak them in water for at least 30 minutes before using to prevent burning.
Feel free to add other vegetables like zucchini or cherry tomatoes to your kabobs.
For an extra tropical flavor, you can add a splash of lime juice to the marinade.
