Ingredients
Scale
12 cups Chex cereal (a mix of Rice and Corn works well)
1 cup pretzel twists
1 cup pecan halves
1 cup (2 sticks) unsalted butter
2 cups packed light brown sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon salt
1/2 cup semi-sweet chocolate chips (optional)
Instructions
Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
In a very large bowl, combine the Chex cereal, pretzels, and pecans. Set aside.
In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture reaches a full rolling boil. Boil for exactly one minute without stirring.
Remove the saucepan from the heat immediately. Stir in the vanilla extract, baking soda, and salt quickly. The mixture will foam up.
Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently fold everything together until the cereal is fully coated. Work quickly.
Spread the coated cereal mixture in a thin, even layer onto the prepared baking sheets.
Bake for 25 minutes. Remove from the oven, stir the mix gently, and return to the oven for another 25 minutes.
Remove from the oven and immediately sprinkle the chocolate chips (if using) over the hot mix. Let it cool completely on the sheets without stirring. The crunch develops as it cools.
Once cool, break the mix into pieces. Store in an airtight container.
Notes
For extra flavor, substitute half the Chex cereal with Cheerios or mixed nuts.
If you do not have corn syrup, you can substitute it with an equal amount of granulated sugar, but the texture may be slightly less chewy.
Do not overbake; the mix should be light golden brown, not dark brown, to maintain the crunch.
