A simple, hearty, and cheesy breakfast casserole using frozen tater tots, eggs, and sausage. Assemble this the night before for an easy morning bake.

Ingredients

Scale
  • 1 (32 ounce) bag frozen tater tots
  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 1 cup chopped onion
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 large eggs
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
  3. Sprinkle the cooked sausage or bacon and the chopped onion evenly over the tater tots.
  4. In a large bowl, whisk together the cream of mushroom soup, milk, salt, and pepper.
  5. Add the eggs to the soup mixture and whisk until just combined. Pour this mixture evenly over the sausage and tots layer.
  6. Sprinkle 1 cup of the shredded cheese over the egg mixture.
  7. Top with the remaining half of the frozen tater tots.
  8. Cover the dish tightly with aluminum foil. You can refrigerate at this point for up to 12 hours if making ahead.
  9. If baking immediately, bake covered for 30 minutes. If baking from the refrigerator, bake covered for 40 minutes.
  10. Remove the foil and sprinkle the remaining 1 cup of cheese over the top.
  11. Bake uncovered for an additional 15 to 20 minutes, or until the tots are golden brown and the casserole is set in the center.
  12. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a make-ahead option, assemble the entire casserole through step 5, cover, and refrigerate overnight. Add 10 minutes to the initial covered baking time.
  • You can substitute bacon for sausage or use a mix of both meats.
  • If you prefer a crispier top layer, place the baking dish in the oven while it preheats.
