Ingredients
Scale
2 pounds frozen tater tots, thawed slightly
1 pound breakfast sausage, cooked and drained
1 cup chopped onion
10 large eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
Arrange the slightly thawed tater tots in a single layer across the bottom of the prepared baking dish.
Sprinkle the cooked sausage and chopped onion evenly over the tater tots.
In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Pour the egg mixture evenly over the sausage and tater tot layers.
Cover the dish tightly with foil. Refrigerate for at least 4 hours or overnight.
When ready to bake, remove the foil and sprinkle the shredded cheese over the top.
Bake for 45 to 55 minutes, or until the eggs are set and the tater tots on top are golden brown and crispy.
Let the casserole rest for 5 minutes before slicing and serving.
Notes
For a make-ahead option, assemble the entire casserole up to the cheese layer, cover, and refrigerate for up to 24 hours. Add 10 minutes to the baking time if baking directly from the refrigerator.
You can substitute cooked bacon for the sausage if you prefer.
If you like more spice, add 1/4 teaspoon of garlic powder to the egg mixture.
