Ingredients
Scale
1 tablespoon vegetable oil
1 pound ground beef or turkey
1 medium onion, chopped
1 (10 ounce) can mild red enchilada sauce
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 cup frozen corn kernels
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 1/2 cups yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/4 cup sugar
1/2 teaspoon salt
1 cup milk
2 large eggs
1/2 cup shredded cheddar cheese (optional, for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9-inch pie plate or an 8×8 inch baking dish.
Heat the oil in a large skillet over medium heat. Add the ground meat and onion. Cook until the meat is browned and the onion is soft, about 5 to 7 minutes. Drain off any excess grease.
Stir the enchilada sauce, black beans, diced tomatoes with chilies, corn, chili powder, cumin, and salt into the meat mixture. Bring to a simmer, then remove from heat.
Pour the meat filling evenly into the prepared baking dish.
In a medium bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt for the topping.
In a separate small bowl, whisk together the milk and eggs. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Spoon the cornbread batter evenly over the meat filling. If using, sprinkle the shredded cheese over the batter.
Bake for 30 to 35 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
Let the pie cool for 10 minutes before slicing and serving.
Notes
You can substitute ground turkey for ground beef for a lighter flavor.
For a spicier filling, add 1/4 teaspoon of cayenne pepper with the other spices.
If you prefer a more savory topping, reduce the sugar in the batter to 1 teaspoon.
