Scale
1 cup rolled oats
1/2 cup natural peanut butter (or almond butter)

1/4 cup chia seeds
1/4 cup unsweetened shredded coconut
1 teaspoon vanilla extract
Pinch of salt
Instructions
Combine all ingredients in a medium bowl.
Mix well until everything is thoroughly incorporated. The mixture should hold together when pressed.
If the mixture seems too dry, add a teaspoon of water or extra nut butter. If too wet, add a tablespoon of oats.
Roll the mixture into small, one-inch balls.
Place the energy balls on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to firm up before serving.
Store leftovers in an airtight container in the refrigerator.
Notes
Feel free to add 1-2 tablespoons of cocoa powder for a chocolate version.
You can substitute sunflower seeds or walnuts for the coconut if you prefer.
These are best eaten within one week when stored in the fridge.
