This is a recipe for simple, reliable royal icing that hardens completely, perfect for decorating cutout sugar cookies that need to be stacked or gifted. This icing dries firm and smooth.

Ingredients

Scale
  • 3 tablespoons Meringue Powder
  • 4 cups Powdered Sugar, sifted
  • 6 tablespoons Water (approximately)

Instructions

  1. Combine meringue powder and powdered sugar in a large bowl.
  2. Slowly whisk in the water until the mixture is smooth and holds stiff peaks.
  3. If the icing is too thick for piping, add water one teaspoon at a time until the desired consistency is reached.
  4. Use immediately or cover tightly with plastic wrap pressed directly onto the surface to prevent drying.
  5. Apply to cooled sugar cookies using a piping bag or spreading with an offset spatula.
  6. Allow cookies to dry uncovered at room temperature until the icing is completely hard to the touch, which may take several hours depending on humidity.

Notes

  • Always sift your powdered sugar to prevent lumps in the final icing.
  • For outlining cookies, make the icing slightly thinner than for flooding.
  • If the icing dries too thick while working, stir in a few drops of water.
  • For gifting, ensure the cookies are fully dry before packaging them touching each other.
