Bake this impressive stuffed salmon featuring a rich shrimp and crab filling, topped with crispy panko breadcrumbs for a restaurant-quality meal.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 8 ounces raw shrimp, peeled and deveined, finely chopped
  • 4 ounces imitation crab meat, shredded
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup Panko breadcrumbs
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish.
  2. In a medium bowl, combine the chopped shrimp, shredded crab meat, softened cream cheese, Parmesan cheese, parsley, lemon juice, Old Bay seasoning, and garlic powder. Mix until fully combined. Season the stuffing mixture with salt and pepper.
  3. Place the salmon fillets in the prepared baking dish. Cut a deep pocket into the thickest part of each fillet, being careful not to cut all the way through to the bottom or sides.
  4. Spoon the shrimp and crab stuffing evenly into the pockets of the salmon fillets.
  5. In a small bowl, mix the Panko breadcrumbs with the melted butter. Sprinkle the Panko mixture evenly over the top of the stuffed salmon.
  6. Bake for 18 to 22 minutes, or until the salmon is cooked through and flakes easily with a fork, and the topping is golden brown.
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • For a lower carb option, substitute almond flour for the Panko breadcrumbs in the topping.
  • You can use fresh lump crab meat instead of imitation crab for a richer flavor.
  • If you prefer a baked topping without butter, lightly mist the Panko with cooking spray before sprinkling.
