Create a decadent brunch centerpiece with this Cream Cheese Stuffed French Toast recipe. We sandwich a rich, slightly sweet cream cheese filling between thick bread slices, then pan-fry them until golden brown and crispy outside, leaving the center perfectly creamy. Serve this indulgent treat topped with fresh mixed berries for a truly special breakfast project.

Ingredients

Scale
  • 8 slices thick-cut brioche or challah bread
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon (for filling)
  • 2 large eggs
  • 1/2 cup milk (whole or 2%)
  • 1 teaspoon vanilla extract (for batter)
  • 1/4 teaspoon ground cinnamon (for batter)
  • 2 tablespoons butter, for frying
  • Fresh mixed berries (blueberries, strawberries), for topping
  • Powdered sugar, for dusting

Instructions

  1. In a medium bowl, beat the softened cream cheese with granulated sugar, vanilla extract, lemon zest, and 1/4 teaspoon cinnamon until smooth and creamy. This is your filling.
  2. Lay out four slices of bread. Spread an even layer of the cream cheese mixture onto one side of each of these four slices, leaving a small border around the edge.
  3. Top each cream cheese slice with the remaining four slices of bread, forming four sandwiches. Gently press the edges together to seal the filling inside.
  4. In a shallow dish, whisk together the eggs, milk, remaining vanilla extract, and 1/4 teaspoon cinnamon to create the batter.
  5. Heat a large non-stick skillet over medium heat. Add 1 tablespoon of butter.
  6. Dip each stuffed sandwich into the egg batter, coating both sides quickly. Do not soak the bread too long, or it will become soggy.
  7. Carefully place two sandwiches in the hot skillet. Cook for 3 to 4 minutes per side, until the bread is deep golden brown and crispy. Adjust heat as needed to cook through without burning. Add more butter between batches.
  8. Transfer the cooked stuffed French toast to a plate. Repeat with the remaining sandwiches.
  9. Slice each piece in half diagonally. Dust generously with powdered sugar and top with fresh mixed berries before serving immediately.

Notes

  • Use day-old bread; it holds up better to the soaking process.
  • For a tangier filling, add 1 tablespoon of sour cream to the cream cheese mixture.
  • If you prefer a crispier exterior, add 1/4 cup panko breadcrumbs to a plate and lightly press the dipped sides of the sandwich into the crumbs before frying.
  • Jacob recommends using a cast-iron skillet for the best, most even browning.
