Ingredients
Scale
4 cups fresh strawberries, hulled and crushed
1 package (1.75 oz) powdered fruit pectin
5 cups granulated sugar
1/2 cup water
Instructions
Prepare your containers: Ensure you have clean, freezer-safe containers (like small mason jars) ready.
Crush the strawberries: Place the hulled and crushed strawberries into a large bowl.
Mix pectin and sugar: In a separate small saucepan, combine the powdered pectin and water. Bring this mixture to a full rolling boil over high heat, stirring constantly. Boil hard for exactly one minute, then remove from heat.
Combine ingredients: Immediately stir the boiling pectin mixture into the crushed strawberries. Mix well for about three minutes until the sugar is fully dissolved.
Fill containers: Ladle the jam mixture into your prepared freezer containers, leaving about 1/2 inch of headspace at the top.
Cool and freeze: Let the jam cool to room temperature on the counter. Once cool, cover the containers tightly and place them in the freezer.
Store: The jam will keep well in the freezer for up to one year.
Notes
You can use this jam as a topping for ice cream or yogurt, or spread it on toast.
For a lower sugar version, you can substitute the granulated sugar with a sugar substitute designed for jam making, following the pectin package directions for that substitution.
If you prefer a smoother jam, pulse the strawberries briefly in a food processor instead of crushing them by hand.
