Turn simple carrots into a flavorful, spicy side dish with this easy Harissa Roasted Carrots recipe. Jacob brings his intuitive touch to Amelia’s planning for a perfect side project.

Ingredients

Scale
  • 1 pound carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons harissa paste
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the olive oil, harissa paste, honey (or maple syrup), salt, and pepper. This is your flavor base.
  3. Add the trimmed carrots to the bowl. Toss them well until every carrot piece is coated evenly with the harissa mixture.
  4. Spread the coated carrots in a single layer on a baking sheet. Give them space so they roast instead of steam.
  5. Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized at the edges.
  6. Serve immediately as your perfect side dish.

Notes

  • If you prefer a milder spice level, start with 1 tablespoon of harissa paste and add more to taste.
  • For extra texture, sprinkle with toasted sesame seeds or chopped fresh cilantro just before serving.
  • Ensure your carrots are cut to a relatively uniform size for even cooking.
