- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 cup vegetable broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 8 small corn or flour tortillas
- Optional toppings: salsa, avocado, shredded lettuce, lime wedges
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onion and cook until soft, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the rinsed black beans, vegetable broth, chili powder, cumin, and salt to the skillet.
- Bring the mixture to a simmer. Use a fork or potato masher to lightly mash about half of the beans to create a thicker texture.
- Cook for 5-7 minutes, stirring occasionally, until most of the liquid has evaporated.
- Warm the tortillas according to package directions.
- Spoon the black bean mixture into the warm tortillas.
- Top with your favorite ingredients and serve immediately.
Notes
- Jacob suggests adding a pinch of smoked paprika for extra depth of flavor.
- This recipe is a great base; feel free to add chopped bell peppers with the onion.
- If you prefer spicier tacos, add a dash of hot sauce during the simmering stage.
