Ingredients
Scale
3 lbs chicken pieces (mixed parts)
2 cups buttermilk
1 tablespoon hot sauce
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
2 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
Vegetable oil, for frying
Instructions
Place chicken pieces in a large bowl. Pour buttermilk and hot sauce over the chicken. Add 1 teaspoon of salt, 1/2 teaspoon of pepper, paprika, garlic powder, and cayenne pepper. Mix well to coat. Cover and refrigerate for at least 4 hours, or preferably overnight.
In a separate shallow dish, whisk together the flour, cornstarch, baking powder, remaining 1 teaspoon salt, and remaining 1/2 teaspoon pepper. This is your dry dredge mixture.
Remove chicken from the buttermilk, letting excess drip off, but do not wipe dry.
Dredge each piece thoroughly in the flour mixture, pressing firmly to adhere the coating. Shake off excess flour.
Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 325 degrees Fahrenheit. Use a thermometer to maintain temperature.
Carefully place 3 or 4 pieces of chicken into the hot oil, ensuring you do not overcrowd the pot. Overcrowding lowers the oil temperature and results in soggy chicken.
Fry for about 6 to 8 minutes per side until golden brown and cooked through (internal temperature of 165 degrees Fahrenheit). For extra crispiness, remove the chicken when lightly golden (about 12 minutes total), let rest on a rack for 5 minutes, then return to the oil heated to 350 degrees Fahrenheit for a final 2 to 3 minutes until deep golden and very crisp.
Remove chicken and place it on a wire rack set over a baking sheet to drain excess oil. Do not place directly on paper towels, as this traps steam and softens the crust.
Serve immediately.
Notes
For the craggiest coating, lightly wet your hands before the second press into the flour mixture after the initial dredge.
Maintain oil temperature strictly between 325°F and 350°F during frying for the best texture and color.
Use bone-in, skin-on chicken for the most traditional flavor and moisture.
