Ingredients
Scale
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter
Instructions
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, whisk the milk, egg, and melted butter until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine for maximum fluffiness.
Heat a lightly oiled griddle or large non-stick pan over medium-high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip carefully.
Serve immediately with your preferred toppings.
Notes
For extra lift, separate the egg. Whisk the yolk into the milk mixture, and whip the egg white until soft peaks form. Gently fold the whipped egg white into the batter last.
Resting the batter for 5 minutes before cooking allows the baking powder to activate fully, resulting in a lighter texture.
Use low heat if your griddle runs hot to prevent the outside from burning before the inside cooks through and becomes fluffy.
