Ingredients
Scale
4 lb pork shoulder (Boston butt), trimmed
1 cup water or chicken broth
1/2 cup apple cider vinegar
1/4 cup brown sugar, packed
2 tablespoons smoked paprika
1 tablespoon kosher salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper (optional)
1 1/2 cups your favorite BBQ sauce
Instructions
Trim excess fat from the pork shoulder. Place the pork in the slow cooker.
In a small bowl, mix the water or broth, apple cider vinegar, brown sugar, smoked paprika, salt, pepper, garlic powder, onion powder, and cayenne pepper (if using). Pour this mixture over the pork.
Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is very tender and easily shreds with a fork.
Remove the pork from the slow cooker and place it on a large cutting board. Skim any excess fat from the liquid remaining in the slow cooker.
Shred the pork using two forks.
Return the shredded pork to the slow cooker. Pour the reserved cooking liquid and 1 1/2 cups of your favorite BBQ sauce over the meat. Stir to coat completely.
Cook on the warm setting for 30 minutes to allow the flavors to combine.
Serve hot on buns for BBQ pulled pork sandwiches.
Notes
For best flavor, use a pork shoulder with some marbling.
If you prefer a thicker sauce, remove the pork and simmer the remaining liquid on the stovetop until it reduces slightly before mixing it back in.
This pulled pork freezes well. Cool completely, then store in airtight containers for up to 3 months.
