This is the easiest Slow-Cooker Pot Roast recipe you will ever make. It requires minimal effort and results in incredibly tender meat that falls apart. Perfect for busy days when you want a comforting, delicious meal ready when you get home.

Ingredients

Scale
  • 3-4 lb beef chuck roast
  • 1 packet (1 oz) dry onion soup mix
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 packet (0.7 oz) dry ranch seasoning mix
  • 1 envelope (0.7 oz) dry au jus gravy mix
  • 4 medium carrots, peeled and roughly chopped
  • 3 celery stalks, roughly chopped
  • 2 lbs small potatoes, quartered

Instructions

  1. Place the beef roast in the bottom of your slow cooker.
  2. In a bowl, whisk together the onion soup mix, cream of mushroom soup, beef broth, ranch seasoning mix, and au jus gravy mix until smooth.
  3. Pour the soup mixture evenly over the roast.
  4. Arrange the carrots, celery, and potatoes around the roast in the slow cooker.
  5. Cover and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the meat is fork-tender.
  6. Shred the beef with two forks directly in the slow cooker and stir gently to coat with the juices before serving.

Notes

  • You can thicken the sauce further by mixing 2 tablespoons of cornstarch with 1/4 cup of cold water and stirring it into the slow cooker during the last 30 minutes of cooking.
  • Use high-quality beef chuck roast for the best flavor and texture.
  • If you prefer, you can omit the vegetables and cook only the roast, using the liquid as a base for gravy.
