Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (15 ounce) can tomato sauce
  • 1 cup chicken broth
  • 1/2 cup plain yogurt or heavy cream
  • 1/4 cup butter
  • 2 tablespoons tomato paste
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan, for serving

Instructions

  1. Place the chicken pieces into the slow cooker.
  2. Add the chopped onion, minced garlic, and grated ginger over the chicken.
  3. Pour in the tomato sauce and chicken broth. Stir gently to combine.
  4. In a separate bowl, whisk together the yogurt or cream, butter, tomato paste, garam masala, turmeric, cumin, paprika, salt, and cayenne pepper (if using).
  5. Pour the spice and butter mixture over the chicken and sauce in the slow cooker. Stir everything together until the chicken is coated.
  6. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender.
  7. Shred the chicken slightly with two forks directly in the slow cooker, or remove and shred before returning to the sauce.
  8. Taste and adjust salt if needed.
  9. Serve hot over rice or with naan bread. Garnish generously with fresh cilantro.

Notes

  • This recipe works well with either chicken breasts or thighs. Thighs provide a richer flavor.
  • If you prefer a smoother sauce, carefully blend a portion of the sauce mixture before stirring it back in at the end.
  • Adjust the cayenne pepper to control the heat level for your preference.
