Ingredients
Scale
1 pound pasta (fettuccine or linguine recommended)
4 cups low-sodium chicken or vegetable broth
1 cup low-fat milk
4 cloves garlic, minced
1/2 cup grated Parmesan cheese, plus more for serving
2 tablespoons cornstarch
2 tablespoons unsalted butter
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Place the pasta, broth, milk, and minced garlic into a large pot or Dutch oven.
Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the pasta from sticking.
Once boiling, reduce the heat to medium and simmer, stirring frequently, until the pasta is cooked al dente and most of the liquid has reduced (about 10-12 minutes).
In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water until smooth to create a slurry.
Pour the cornstarch slurry into the simmering sauce and stir constantly until the sauce thickens slightly.
Remove the pot from the heat. Stir in the butter and Parmesan cheese until the sauce is smooth and creamy.
Season with salt and pepper to your preference.
Serve immediately, garnished with fresh parsley and extra Parmesan cheese.
Notes
Using a cornstarch slurry is key for thickening the sauce without heavy cream.
Stir constantly when adding the cheese to prevent clumping.
This recipe works best with low-sodium broth so you can control the final salt level.
