Ingredients
Scale
1 pound large shrimp, peeled and deveined
2 cups broccoli florets
1 cup chopped bell peppers (any color)
1 cup chopped zucchini
1/2 cup sliced red onion
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper to taste
Instructions
Preheat your grill to medium-high heat or your oven to 400°F (200°C).
Tear off four large pieces of aluminum foil, about 12×18 inches each.
Divide the shrimp and vegetables evenly among the four foil pieces, placing them in the center of each.
Drizzle each packet with 1/2 tablespoon of olive oil.
Sprinkle each packet with garlic powder, paprika, salt, and pepper.
Bring the sides of the foil together over the food and crimp the edges to create a sealed packet. Ensure there are no gaps.
Place the foil packets on the grill or a baking sheet.
Grill for 10-12 minutes, or bake for 15-20 minutes, until the shrimp are pink and cooked through and the vegetables are tender.
Carefully open the packets (watch for steam!) and serve immediately.
Notes
Feel free to substitute your favorite vegetables, such as asparagus, snap peas, or cherry tomatoes.
Add a squeeze of lemon juice before serving for extra brightness.
For a spicier kick, add a pinch of red pepper flakes to the seasoning.
