Ingredients
Scale
3 cups Pancake Mix (scratch or store-bought like Kodiak Cakes)
3 cups Milk (or liquid specified by mix)
2 large Eggs
1 teaspoon Vanilla Extract (optional)
2 tablespoons Melted Butter or Oil
1 cup Mix-ins (e.g., chocolate chips, blueberries, cooked sausage crumbles)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Lightly grease a standard 13×18 inch rimmed baking sheet.
In a large bowl, whisk together the pancake mix, milk, eggs, vanilla extract, and melted butter until just combined. Do not overmix; a few lumps are fine.
Fold in your desired mix-ins, such as berries or cooked sausage.
Pour the batter evenly onto the prepared baking sheet. Spread it gently to cover the bottom edge to edge.
Bake for 12 to 18 minutes, or until the top is set and a toothpick inserted in the center comes out clean.
Remove from the oven. Let it cool slightly before slicing into squares.
Serve immediately with your favorite toppings like syrup or whipped cream.
Notes
For extra fluffy results, let the batter rest for 5 minutes before pouring onto the pan.
If using savory additions like cheese or pre-cooked bacon, sprinkle them evenly over the top during the last 5 minutes of baking.
This recipe scales well; use two sheet pans for an even thinner layer if you are serving a very large group.
