This recipe delivers a flavorful lemon herb salmon dinner cooked entirely on one sheet pan. You get perfectly flaky fish with bright, fresh herbs, making cleanup simple and fast. It is a fantastic weeknight meal that proves delicious food does not require complicated steps.

Ingredients

Scale
  • 1.5 lbs Salmon fillets (about 4 portions)
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Lemon, thinly sliced for topping
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper to create the herb marinade.
  3. Pat the salmon fillets dry with a paper towel. Place them on the prepared baking sheet.
  4. Brush the herb marinade evenly over the top of each salmon fillet.
  5. Arrange the thin lemon slices on top of the salmon.
  6. Bake for 12 to 15 minutes, depending on the thickness of the fish, until the salmon flakes easily with a fork.
  7. Remove from the oven. Garnish with fresh chopped parsley before serving immediately.

Notes

  • You can easily add vegetables like asparagus or green beans to the sheet pan for a complete meal. Add heartier vegetables first and bake for 5-7 minutes before adding the salmon.
  • For a stronger lemon flavor, use fresh herbs instead of dried (use 1 tablespoon each of fresh oregano and thyme).
  • Do not overcook the salmon; check for doneness around the 12-minute mark.
