- 2 (6 ounce) Ahi tuna steaks, sushi grade
- 1 tablespoon sesame oil
- 1/4 cup sesame seeds (mixed black and white)
- 1 teaspoon coarse salt
- 1/2 teaspoon black pepper
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon grated fresh ginger
- Pat the tuna steaks completely dry with paper towels.
- In a shallow dish, combine the sesame seeds, salt, and pepper.
- Press all sides of the tuna steaks firmly into the seed mixture until evenly coated.
- Heat the sesame oil in a heavy skillet (cast iron is best) over medium-high heat until shimmering, almost smoking.
- Carefully place the crusted tuna steaks in the hot skillet.
- Sear for 1 to 2 minutes per side for rare to medium-rare. Adjust time based on desired doneness.
- Remove the tuna from the skillet and let it rest on a cutting board for 5 minutes.
- Slice the tuna against the grain into 1/4-inch thick pieces.
- Drizzle with soy sauce and top with grated ginger before serving.
Notes
- Use only sushi-grade or sashimi-grade tuna for this recipe.
- For an extra layer of flavor, mix a small amount of crushed nori seaweed into the sesame seed crust.
- If you prefer a different flavor, substitute the soy sauce and ginger with a light teriyaki glaze after slicing.
