Make a rich, cheesy, and creamy scalloped potato and ham casserole using your slow cooker for simple preparation.

Ingredients

Scale
  • 3 lbs Russet potatoes, peeled and thinly sliced
  • 1.5 cups cooked ham, diced
  • 1 medium onion, thinly sliced
  • 2 cups heavy cream
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded smoked Gouda cheese
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Lightly grease the inside of your slow cooker insert.
  2. In a large bowl, whisk together the heavy cream, milk, flour, salt, pepper, and garlic powder until the flour is dissolved.
  3. Stir in the cheddar cheese and smoked Gouda cheese into the cream mixture.
  4. Layer half of the sliced potatoes in the bottom of the slow cooker.
  5. Sprinkle half of the diced ham and half of the sliced onion over the potatoes.
  6. Pour half of the cream sauce evenly over the layers.
  7. Repeat the layering process with the remaining potatoes, ham, and onions, finishing with the remaining cream sauce.
  8. Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 3.5 hours, until the potatoes are tender when pierced with a fork.
  9. Carefully remove the lid during the last 30 minutes of cooking to allow some moisture to evaporate for a slightly thicker sauce, if desired.
  10. Let the casserole rest for 10 minutes before serving.

Notes

  • Slice your potatoes uniformly thin, about 1/8 inch thick, for even cooking.
  • You can use pre-shredded cheese, but block cheese shredded at home melts smoother.
  • This recipe works well with leftover holiday ham.
