Ingredients
Scale
1 cup rolled oats
2 cups water or broth
1/2 teaspoon salt
4 slices bacon
2 large eggs
Freshly ground black pepper to taste
Optional toppings: chopped chives, grated cheese
Instructions
Cook the bacon in a skillet over medium heat until crisp. Remove the bacon, reserving about 1 tablespoon of the bacon fat in the pan. Set the cooked bacon aside.
Add the rolled oats, water or broth, and salt to a medium saucepan. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the oats are thick and creamy, about 5 to 7 minutes.
While the oatmeal cooks, cook the eggs in the reserved bacon fat in the skillet. You can fry them sunny-side up or over easy, based on your preference for a runny yolk.
Divide the cooked oatmeal between two bowls.
Top each bowl with a fried egg and crumbled bacon pieces.
Season with black pepper and any desired optional toppings like chives or cheese.
Notes
Using broth instead of water adds a deeper savory flavor to the oatmeal base.
A runny egg yolk acts as a natural, rich sauce for the oatmeal.
Cook the oats slightly firmer than you would for sweet oatmeal, as they will soften more with the toppings.
