- 1 pound bulk pork sausage
- 1 (14.5 ounce) can diced tomatoes and green chiles (Rotel), undrained
- 1 (10 ounce) can Ro-Tel diced tomatoes and green chiles, undrained
- 1 (16 ounce) package processed cheese, cubed (like Velveeta)
- 1/2 cup milk (optional, for thinner consistency)
- Brown the sausage in a skillet over medium heat. Drain off any excess grease completely.
- Transfer the cooked sausage to a small slow cooker.
- Add the undrained diced tomatoes and green chiles (both cans) to the slow cooker.
- Add the cubed processed cheese to the slow cooker.
- Cook on LOW for 2 hours, stirring occasionally until the cheese is fully melted and the mixture is smooth.
- If the dip is too thick, stir in the milk until you reach your desired consistency.
- Keep the dip warm on the ‘Keep Warm’ setting until serving. Serve with tortilla chips or crackers.
Notes
- For a spicier dip, use the hot variety of diced tomatoes and green chiles.
- You can prepare this dip ahead of time and reheat it slowly in the slow cooker.
- If you do not have Rotel, use 10 ounces of diced tomatoes and 4 ounces of diced green chiles separately.
