Ingredients
Scale
1 large head cauliflower, cut into small florets
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
12 small corn tortillas
For Topping: Salsa, avocado slices, fresh cilantro, lime wedges
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, smoked paprika, salt, and pepper until evenly coated.
Spread the seasoned cauliflower in a single layer on a baking sheet.
Roast for 20 to 25 minutes, flipping halfway through, until the edges are tender and slightly caramelized.
Warm the corn tortillas according to package directions (you can warm them directly on a dry skillet for best results).
Fill each warm tortilla with the roasted cauliflower.
Top your tacos with salsa, avocado slices, cilantro, and a squeeze of fresh lime juice.
Notes
Jacob suggests adding a pinch of cayenne pepper to the seasoning mix for an extra kick.
Make sure not to overcrowd the baking sheet; this helps the cauliflower roast instead of steam.
This recipe is a great base; feel free to add a vegan sour cream or chipotle sauce.
