Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 pound ground pork or ground turkey
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can water chestnuts, drained and chopped
  • 1 (10 ounce) bag coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup low sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha (optional, for heat)
  • 1/2 teaspoon ground black pepper
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the ground pork or turkey to the skillet. Break it up with a spoon and cook until browned, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the grated ginger and minced garlic to the skillet. Cook for 1 minute until fragrant.
  4. Stir in the chopped water chestnuts and the coleslaw mix. Cook, stirring occasionally, until the cabbage begins to wilt, about 3 to 4 minutes.
  5. Pour in the soy sauce (or tamari), rice vinegar, sriracha (if using), and black pepper. Stir everything together well to coat the mixture evenly.
  6. Continue cooking for another 2 to 3 minutes until the liquid has mostly evaporated and the vegetables are tender-crisp.
  7. Remove from heat. Serve immediately, garnished generously with sliced green onions and sesame seeds.

Notes

  • This recipe cooks fast; have all your ingredients prepped before you start cooking.
  • For a vegetarian option, substitute the meat with crumbled firm tofu or extra mushrooms.
  • Use tamari instead of soy sauce if you need this dish to be strictly gluten-free.
  • Taste the mixture before adding salt; the soy sauce provides significant sodium.
