You will make a Quick & Easy Skillet Chinese Pepper Steak Stir Fry. This recipe delivers tender beef strips, crisp bell peppers, and onions coated in a savory, rich sauce. It is a perfect weeknight dinner that tastes just like your favorite takeout, ready in about 30 minutes.

Ingredients

Scale
  • 1.5 lbs flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon soy sauce (for marinating)
  • 1 teaspoon cornstarch (for marinating)
  • 1 tablespoon vegetable oil (for frying beef)
  • 1 large yellow onion, sliced
  • 2 bell peppers (one red, one green), sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup beef broth
  • 2 tablespoons soy sauce (for sauce)
  • 1 tablespoon oyster sauce (optional, for richer flavor)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. In a bowl, toss the sliced beef with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Set aside for 10 minutes.
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer (work in batches if needed) and cook quickly until browned, about 2-3 minutes per side. Remove the beef and set it aside.
  3. Add a little more oil to the skillet if necessary. Add the sliced onions and bell peppers. Stir fry for 3-4 minutes until they are tender-crisp.
  4. Add the minced garlic and grated ginger to the vegetables. Cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together the beef broth, 2 tablespoons soy sauce, oyster sauce (if using), and brown sugar. Pour this mixture into the skillet. Bring to a simmer.
  6. Return the cooked beef to the skillet. Stir well to coat everything in the sauce.
  7. Stir the cornstarch slurry one more time and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
  8. Remove from heat. Stir in the sesame oil. Serve immediately over hot rice or noodles.

Notes

  • For the best texture, slice your steak when it is slightly frozen. This keeps the slices uniform.
  • Do not overcrowd the pan when searing the beef; this causes the meat to steam instead of brown.
  • You can substitute green bell peppers with yellow or orange peppers for more color.
  • This dish pairs wonderfully with steamed white rice or lo mein noodles.
