Enjoy these Quick & Easy Shredded Chicken Street Tacos. Jacob perfected this recipe, blending my planning with his intuitive cooking. This recipe delivers tender, flavorful chicken fast, perfect for a weeknight meal or meal prep.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 packet (1 oz) low-sodium taco seasoning
  • 1/2 cup water
  • 12 small corn tortillas
  • Optional Toppings: Chopped onion, cilantro, lime wedges

Instructions

  1. Place chicken breasts in a large skillet or Dutch oven.
  2. Pour in the chicken broth and water.
  3. Sprinkle the taco seasoning evenly over the chicken.
  4. Bring the liquid to a simmer over medium-high heat.
  5. Reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F.
  6. Remove the chicken from the skillet and shred it using two forks.
  7. Return the shredded chicken to the skillet and stir it into the remaining cooking liquid until fully coated and heated through.
  8. Warm the corn tortillas according to package directions (a dry skillet works well).
  9. Fill each tortilla with the shredded chicken mixture.
  10. Top with fresh onion, cilantro, and a squeeze of lime juice.

Notes

  • For a slow cooker variation: Place all ingredients except tortillas and toppings in a slow cooker. Cook on low for 4 hours or high for 2 hours. Shred and mix before serving.
  • This shredded chicken works great in bowls or over nachos too.
  • Use your favorite seasoning blend if you skip the packet.
