Make thick-cut French toast with added protein powder or egg whites for a high-protein brunch option, cooked in a skillet or air fryer.

Ingredients

Scale
  • 4 slices thick-cut bread
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 scoop (about 30g) vanilla or unflavored protein powder OR 1/2 cup liquid egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Cooking spray or butter for the pan/basket

Instructions

  1. In a shallow dish, whisk together the eggs, milk, protein powder (or egg whites), vanilla extract, cinnamon, and salt until well combined and smooth. If using protein powder, mix thoroughly to break up any clumps.
  2. Heat a non-stick skillet over medium heat, or preheat your air fryer to 375°F (190°C). Lightly grease the cooking surface or air fryer basket.
  3. Dip each slice of bread into the batter, allowing it to soak for about 15-20 seconds per side to absorb the mixture without becoming soggy.
  4. For Skillet Method: Place the soaked bread on the hot skillet. Cook for 3-4 minutes per side, until golden brown and cooked through.
  5. For Air Fryer Method: Place the soaked bread in a single layer in the air fryer basket. Cook for 6-8 minutes, flipping halfway through, until golden brown and firm.
  6. Serve immediately with your preferred toppings.

Notes

  • For a thicker batter, slightly reduce the amount of milk used.
  • You can substitute regular bread with whole wheat or brioche slices.
  • If the batter is too thin when using egg whites, add a tablespoon of oat flour to thicken it slightly.
