A moist, fluffy banana bread recipe boosted with protein powder or cottage cheese, suitable for one-bowl preparation and freezing.

Ingredients

Scale
  • 3 very ripe bananas, mashed
  • 1/2 cup cottage cheese (or 1/2 cup Greek yogurt)
  • 1/4 cup melted coconut oil or butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 1 cup whole wheat flour
  • 1/2 cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, cottage cheese, melted oil, eggs, vanilla extract, and brown sugar. Mix until just combined.
  3. In a separate bowl, whisk together the flour, protein powder, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients. Mix gently until you incorporate the flour; do not overmix.
  5. Fold in any optional nuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For best results, use a vanilla or unflavored protein powder.
  • If you prefer a sweeter loaf, add 1 tablespoon of maple syrup to the wet ingredients.
  • Slice the cooled bread and freeze individual slices for quick, high-protein snacks.
