A simple, layered casserole featuring ground beef, cheese, and tortillas, inspired by popular comfort food recipes.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning mix
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10 ounce) can mild red enchilada sauce
  • 1 cup sour cream
  • 1 cup salsa
  • 12 corn or flour tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the taco seasoning mix, cream of mushroom soup, enchilada sauce, sour cream, and salsa into the beef mixture. Heat until warmed through.
  4. Spread a thin layer of the meat mixture on the bottom of the prepared baking dish.
  5. Arrange half of the cut tortillas over the meat mixture.
  6. Spoon half of the remaining meat mixture over the tortillas.
  7. Sprinkle with half of the cheddar and Monterey Jack cheese blend.
  8. Repeat the layers: remaining tortillas, remaining meat mixture, and top with the remaining cheese blend.
  9. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly browned.
  10. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • You can substitute cream of chicken soup for cream of mushroom soup if desired.
  • For a make-ahead option, assemble the entire casserole, cover it, and refrigerate for up to 24 hours before baking. Add 10 minutes to the baking time if baking directly from the refrigerator.
  • Use your favorite brand of taco seasoning for the best flavor.
