A rich and hearty chowder featuring savory sausage, tender potatoes, and sharp cheddar cheese, perfect for a comforting meal.

Ingredients

Scale
  • 1 pound smoked sausage, sliced
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 4 medium russet potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 4 tablespoons butter

Instructions

  1. Brown the sausage slices in a large pot over medium heat. Remove the sausage and set aside, leaving about 2 tablespoons of drippings in the pot.
  2. Add the chopped onion and celery to the pot. Cook until softened, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the chicken broth until smooth.
  5. Add the diced potatoes, thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  6. Stir in the milk and heavy cream. Heat through, but do not boil.
  7. Return the cooked sausage to the pot.
  8. Remove the pot from the heat. Stir in the butter and the shredded cheddar cheese until the cheese melts completely and the chowder thickens.
  9. Serve hot.

Notes

  • For a thicker chowder, mash about one cup of the cooked potatoes against the side of the pot before adding the dairy.
  • You can substitute smoked sausage with mild Italian sausage if you prefer less smoke flavor.
  • Shred your own cheddar cheese for the best melting quality. Pre-shredded cheese often contains anti-caking agents that affect texture.
