Ingredients
Scale
1 (9 inch) unbaked pie crust
1 cup granulated sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1/2 cup cold water
1 cup whole milk
3 large egg yolks, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
1 cup heavy whipping cream, cold
1/4 cup powdered sugar
1 cup chopped pecans, toasted
Instructions
Prepare the pie crust and chill it while you make the filling.
In a medium saucepan, whisk together granulated sugar, flour, and salt.
Gradually whisk in the cold water until smooth.
Stir in the whole milk.
Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. This takes about 8 to 10 minutes. Do not boil rapidly.
Remove from heat. Temper the egg yolks by slowly whisking about half a cup of the hot milk mixture into the yolks.
Pour the tempered yolk mixture back into the saucepan.
Cook over low heat, stirring constantly, for 1 minute more. Do not let it boil.
Remove from heat. Stir in the butter and vanilla extract until smooth.
Pour the pastry cream into the prepared pie crust. Cover the surface directly with plastic wrap to prevent a skin from forming. Chill for at least 3 hours, or until completely cold.
In a separate bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
Gently spread or pipe the whipped cream over the chilled cream filling.
Sprinkle the toasted, chopped pecans evenly over the whipped cream layer.
Chill the finished pie for at least 30 minutes before slicing and serving.
Notes
Toasting the pecans beforehand deepens their flavor significantly.
For the best texture, make sure the pastry cream is fully chilled before adding the whipped cream topping.
You can use a store-bought crust to save time on your project planning.
