- 2 lbs new potatoes or small Yukon Gold potatoes, halved or quartered
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon zest
- Preheat your oven to 400°F (200°C).
- Toss the cut potatoes with olive oil, salt, and pepper on a large baking sheet. Spread them in a single layer.
- Roast for 25 minutes until the potatoes start to soften and brown.
- Remove the baking sheet from the oven. Sprinkle the Parmesan cheese evenly over the potatoes.
- Return the potatoes to the oven and roast for another 10 to 15 minutes, or until the cheese is melted and golden brown and the potatoes are tender.
- Remove from the oven. Immediately toss the hot potatoes with the fresh parsley, chives, dill, and lemon zest.
- Serve warm as a light side dish.
Notes
- Use small, waxy potatoes like new potatoes for the best texture when roasting.
- If you prefer a stronger herb flavor, increase the amount of dill or chives.
- For extra crispiness, ensure the potatoes are not overcrowded on the baking sheet.
