Prepare a simple, flavorful dinner using chicken breasts and broccoli florets cooked together on one pan with a sweet and savory honey garlic sauce.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, ginger, and red pepper flakes to make the sauce.
  3. Place the cut chicken pieces and broccoli florets onto the prepared baking sheet. Drizzle with olive oil and toss lightly to coat.
  4. Pour about two-thirds of the honey garlic sauce over the chicken and broccoli on the pan. Toss everything directly on the sheet until evenly coated. Spread the mixture into a single layer.
  5. Bake for 15 minutes.
  6. Remove the pan from the oven. Whisk the cornstarch slurry into the remaining one-third of the sauce. Pour this mixture over the chicken and broccoli. Gently toss everything on the pan again.
  7. Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the sauce has thickened slightly.
  8. Serve immediately.

Notes

  • For crispier broccoli, you can roast the broccoli separately for 10 minutes before adding the chicken and sauce.
  • Serve this dish over rice or quinoa to soak up the extra sauce.
  • If you do not have fresh ginger, you can substitute with 1/4 teaspoon ground ginger.
