Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
1 tablespoon olive oil
Salt and black pepper to taste
1 cup fresh spinach, finely chopped
4 ounces cream cheese, softened
1/2 cup crumbled feta cheese
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 teaspoon lemon zest
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easier cleanup.
Pat the salmon fillets dry with paper towels. Place them on the prepared baking sheet and brush lightly with olive oil. Season both sides with salt and pepper.
In a small bowl, combine the softened cream cheese, chopped spinach, crumbled feta cheese, minced garlic, chopped dill, and lemon zest. Mix until the ingredients are evenly incorporated and the mixture is creamy.
Spoon an equal amount of the spinach feta mixture onto the top of each salmon fillet, spreading it evenly to cover the surface.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145 degrees Fahrenheit (63 degrees Celsius).
Remove from the oven and serve immediately.
Notes
For extra moisture, you can place thin lemon slices on the pan around the salmon before baking.
If you prefer a tangier filling, use goat cheese instead of half of the feta cheese.
To ensure the stuffing stays creamy, make sure your cream cheese is fully softened before mixing.
