Make this simple, flavorful dinner using only one pan. Bone-in, skin-on chicken thighs bake in a rich, creamy sauce brightened with fresh lemon and dill.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken thighs dry with paper towels. Rub them with olive oil, salt, pepper, and garlic powder.
  3. Place the seasoned chicken thighs skin-side up in a large oven-safe skillet or baking dish.
  4. Roast for 25 minutes until the skin is browned and the internal temperature reaches 165 degrees Fahrenheit.
  5. Carefully remove the skillet from the oven. Pour the chicken broth around the chicken pieces.
  6. Place the cubed cream cheese evenly around the chicken thighs. Return the skillet to the oven and bake for another 5 minutes, or until the cream cheese is melted.
  7. Remove the skillet from the oven. Stir the melted cream cheese into the broth to create a sauce base.
  8. Whisk in the heavy cream, lemon juice, and lemon zest until the sauce is smooth and creamy.
  9. Stir in the fresh dill. Spoon some of the sauce over the chicken thighs before serving immediately from the pan.

Notes

  • Use boneless, skinless thighs if you prefer a faster cook time, reducing the initial roasting time to 15-20 minutes.
  • For extra browning on the skin, you can broil the chicken for the last 2 minutes, watching closely to prevent burning.
  • If you do not have fresh dill, use 1 teaspoon of dried dill, but add it earlier with the broth for better flavor distribution.
