Ingredients
Scale
1 cup rolled oats
1/2 cup unsweetened cocoa powder
1/2 cup smooth peanut butter or almond butter
1/4 cup maple syrup or honey
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup fresh or frozen raspberries
1/2 cup dark chocolate chips
1 tablespoon coconut oil (for topping)
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a medium bowl, combine the rolled oats, cocoa powder, peanut butter, maple syrup, 1/4 cup melted coconut oil, vanilla extract, and salt. Mix well until a thick, uniform dough forms.
Press the oat mixture evenly into the bottom of the prepared pan. Use the back of a spoon or your fingers to compact the base firmly.
Scatter the raspberries evenly over the oat base. If using frozen raspberries, do not thaw them first.
In a small, microwave-safe bowl, combine the dark chocolate chips and 1 tablespoon of coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
Pour the melted chocolate mixture evenly over the raspberries. Gently spread it to cover the fruit layer.
Place the pan in the freezer for at least 2 hours, or until completely firm.
Use the parchment paper overhang to lift the slice from the pan. Cut into 12 or 16 squares before serving. Store leftovers in an airtight container in the refrigerator or freezer.
Notes
For a richer chocolate flavor, use high-quality cocoa powder.
If you prefer a firmer slice, chill it in the refrigerator for 30 minutes before cutting.
You can substitute peanut butter with sunflower seed butter for a nut-free base.
